1 c cottage cheese (drained)

4 scallions, chopped

2 eggs, beaten

2 teaspoon Italian herb blend

Salt and pepper to taste

2 tablespoon olive oil (or butter)

1Β½ pounds chicken breasts, cubed and salted

24 ounces mushrooms, sliced thick

2 medium zucchini, sliced halfmoons

2 tablespoon grated parmesan


Instructions

Preheat oven to 375Β°F. Lightly grease a 9×13″ baking dish.

In a large bowl, combine mozzarella, cottage cheese, scallions, eggs, herbs, salt, and pepper. Set this aside.
