Oatmeal Cookie Crust:

1 c Rolled Oats

3/4 c Brown Sugar

1 c All-Purpose Flour

12 tbsp Butter, softened

Homemade Apple Filling:

4 Medium Apples, peeled, cored, and diced into 1/4-inch cubes

2 tbsp Butter

1/3 c Brown Sugar

3 tbsp Water

1 tsp Cinnamon

1/8 tsp Nutmeg

1 tbsp + 1 tsp Cornstarch

2 tbsp Water

Alternative Canned Apple Filling:

1 Can Apple Pie Filling

Optional:

Caramel Topping


Instructions

Set your oven to 350°F and grease a muffin tin, with 24 cups.

Begin by melting butter in a pan over medium-high heat. Add apples, cinnamon, nutmeg, brown sugar and 3 tablespoons of water. Cook for 4 to 6 minutes. In a bowl mix cornstarch with 2 tablespoons of water then add it to the pan. Continue cooking until the apples become tender and the filling thickens. Allow it to cool.

In a mixing bowl combine flour, oats and brown sugar. Use softened butter. Cut it into the mixture until it becomes crumbly.

Take about a tablespoon of crust mixture for each muffin cup. Press it down to form a cup shape. Fill each cup with one tablespoon of apple filling. Sprinkle some crust mixture on top.

Place your prepared bites, in the oven. Bake them for around 15 to 20 minutes or until they turn golden brown.

Once baked allow them to cool in the tin for 10 minutes before removing them. You can serve these treats as they are or consider adding a drizzle of caramel topping if desired.

Notes

To make these delicious Apple Crisp Bites gluten-free you can simply replace the all-purpose flour with a flour blend of your choice. Just make sure it’s a 1 to 1 type that mimics the properties of flour. For the oats go for certified gluten-free rolled oats to ensure they haven’t been, in contact, with grains containing gluten. This small adjustment maintains the taste and texture of the bites allowing everyone to savor the comforting spiced flavors of this dessert regardless of their restrictions.
