1 c all-purpose flour (125 grams)
1 c mashed overripe banana – about 2 large bananas (250 grams)
3/4 c chocolate chips, chopped (125 grams)
Instructions
Prepare the Baking Dish: Preheat your oven to 350Β°F (175Β°C). Line an 8×8-inch baking dish with parchment paper. And give it a quick spray with cooking spray.
Cream Butter and Sugar: In a large bowl, cream together the unsalted butter and brown sugar. Until the mixture becomes light and fluffy. This can be done using a stand mixer. Or a hand mixer.
Mix in Wet Ingredients: Add the egg, vanilla extract, and salt to the creamed mixture. Mix on a medium-low speed until well combined. Scraping the bowl’s sides. To ensure everything is well-mixed.
Add Flour: Gradually add the all-purpose flour. Mixing on low speed. Until just combined. Be careful not to overmix.
Incorporate Bananas and Chocolate Chips: Fold in the mashed bananas. Then gently fold in the chocolate chips. Keeping a few aside to sprinkle on top later.
Bake: Pour the batter into your prepared pan. Sprinkle the remaining chocolate chips on top. And bake for 33-37 minutes. Or until the edges are golden. And the center is set. Rotate the pan halfway through the baking time. To ensure even cooking.
Cool and Slice: Let the bars cool completely in the pan on a wire rack. Once cooled, remove them from the pan. And cut them into 16 squares. Use a sharp knife for clean edges.
Notes
To make these Banana Chocolate Chip Bars gluten-free. Replace the all-purpose flour. With a gluten-free flour blend. That measures cup-for-cup. Brands like Bob’s Red Mill or King Arthur. Offer great alternatives. That provides a similar texture. And taste. Ensure the gluten-free flour contains xanthan gum. Or a similar binding agent. As this will help maintain the bars’ texture. Double-check that your baking powder is gluten-free as well. As some brands might contain traces of gluten. Enjoy these delicious bars. With the same great taste.
