1 1/4 c all-purpose flour

1 1/2 tsp baking powder

1/2 tsp salt

2/3 c white sugar

1 c chopped fresh (or canned) peaches, divided 3/4 and 1/4

1/2 c milk

1 egg

1/4 c vegetable oil

1 tsp vanilla extract

For the Streusel Topping:

1/4 c all-purpose flour

3 tbsp white sugar

1/2 tsp baking powder

1/2 tsp cinnamon

4 tbsp cold unsalted butter


Instructions

Preheat & Prepare: Preheat your oven to 350°F (175°C). And line a muffin tin with 12 paper liners.

Mix Dry Ingredients: In a large bowl, combine 1 1/4 c flour, 1 1/2 tsp baking powder, 1/2 tsp salt, and 2/3 c sugar. Stir well. To ensure everything is evenly mixed.

Add Peaches: Toss in 3/4 c chopped peaches. Coating them with the flour mixture. To keep them from sinking in the batter.

Mix Wet Ingredients: In another bowl, whisk together 1/2 c milk, 1 egg, 1/4 c vegetable oil, and 1 tsp vanilla extract until smooth.
