8 precooked frozen hash brown patties (thawing is not necessary)

1 c. shredded sharp cheddar cheese

1 c. shredded Monterey Jack cheese

1 1/2 c. diced leftover ham (about 3/4 pound)

2 scallions, diced

9 large eggs

1 c. whole milk

1/2 tsp. salt

1/2 tsp. dry ground mustard

1/4 tsp. garlic powder


Instructions

Preheat your oven to 325 degrees Fahrenheit (163 degrees Celsius).

Grease a baking dish measuring 9×13 inches.

Arrange the hash patties in a single layer, in the dish. Evenly sprinkle shredded cheddar, Monterey Jack cheese, diced ham and diced scallions on top.

In a bowl whisk together eggs, whole milk, salt, dry ground mustard and garlic powder.

Pour the egg mixture evenly over the cheese and ham.

Cover the dish with foil. Bake for 25 minutes. Then remove the foil. Bake for 20 minutes until the edges turn golden and a knife inserted in the center comes out clean.
