1 c shredded zucchini, drained well

1 clove garlic, grated fine

1/3 c breadcrumbs

1/4 c grated Parmigiano-Reggiano cheese

1 large egg

2 tbsp chopped fresh chives (or 1 tbsp dried chives)

1 tbsp chopped fresh parsley (or 1/2 tbsp dried)

1 tsp chopped fresh basil (or 1/2 tsp dried)

1 tsp chopped fresh oregano (or 1/2 tsp dried)

Pinch of salt and pepper

Tomato sauce for dipping


Instructions

Get Your Oven Ready: Start by preheating your oven to 400Β°F. While that’s heating up. Lightly coat a baking sheet with some olive oil. Or give it a quick spray of non-stick spray.

Prep the Zucchini: Grab a box grater. And shred your zucchini. The key here is to squeeze out as much moisture as possible. Just wrap the shredded zucchini in a clean towel. And give it a good twist. You’ll be amazed at how much liquid comes out!
