1 pound ground beef

1 (1-ounce) package taco seasoning

1 (10-ounce) can diced tomatoes and green chiles, undrained

2 c shredded cheddar cheese

1 (8-ounce) bottle Ranch dressing

5 (15-count) frozen phyllo tart shells


Instructions

Preheat the oven to 350ΒΊF.

In a skillet cook the ground beef until it turns brown. Remove any fat.

Add the taco seasoning and the can of tomatoes and green chiles, to the beef. Allow it to cook for 5 minutes.

Combine the cheddar cheese, Ranch dressing and beef mixture in a bowl.

Scoop the beef and cheese mixture into phyllo tart shells.

Place in the oven. Bake for 8 to 10 minutes until the cheese melts. If using frozen tarts add 2 to 3 minutes to the baking time.

Notes

Don’t worry, going gluten-free doesn’t mean saying goodbye to these treats! If you want to adapt this recipe here are some suggestions:

Taco Seasoning: Although many pre-packaged taco seasonings are naturally gluten-free it’s always a good idea to read the labels or create your own blend at home using individual spices such, as cumin, paprika and chili powder.

Phyllo Tart Shells: Look for shells that are gluten-free or get creative by using baked tortilla cups made from gluten-free tortillas. Alternatively you can use pie crusts that are specifically made without gluten, for a crumbly base that will be just as satisfying.

Ranch Dressing: Most store-bought Ranch dressings are gluten-free but it’s important to check the label for any additives or thickeners that may contain gluten.
