Ingredients

1 tbsp of salt

1 tbsp of ground black pepper

½ tbsp of Italian seasoning

½ tbsp of garlic powder

½ tbsp of onion powder

½ tbsp of paprika (regular or smoked)

3-pound beef eye of round roast, brought to room temperature


Instructions

Preheat your oven to 500°F.

In a small bowl. Combine all the seasonings.

Mix the spices thoroughly. To create an even blend.

Sprinkle the spice mixture. Over the beef roast. Ensuring it’s well-coated. Rub the seasoning. Into the meat. So it adheres evenly. You may have some leftover seasoning. Which can be saved. For another use.

Place the seasoned roast. In a baking dish or roasting pan. Without covering it. Or adding any other ingredients.

Place the pan in the oven. And immediately reduce the temperature. To 475°F.

Roast the beef for 7 minutes per pound. For example. A 3-pound roast. Should be roasted for 21 minutes. While a 4-pound roast. Would need 29 minutes. If the crust becomes too dark. For your preference. You can loosely cover the roast with foil. To prevent further browning.

Turn off the oven. And leave the roast inside. Allowing it to sit undisturbed for 2 to 2.5 hours. It’s important not to open the oven door. During this time. As the residual heat. Will finish cooking the meat slowly. And evenly.

After the resting period. Remove the roast from the oven.

The internal temperature. Should have reached around 145°F. Although it may be slightly lower. Due to the resting process. You’ll know the final doneness. Once you slice into the roast.

Transfer the roast. To a large cutting board. Be prepared for some juices to escape. So have a towel handy. Slice the roast thinly. And serve immediately.
