Honey Glaze:

3 tbsp granulated sugar

3 tbsp light brown sugar

3 tbsp butter, melted

2 tbsp honey

2 tsp water

Pinch kosher salt

Bran Muffins:

1 c unbleached all-purpose flour

1 c oat bran or wheat bran

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp kosher salt

1/3 c light brown sugar

1/4 c honey

2 tbsp molasses

1/4 c vegetable oil

1 large egg

1/4 c water

2 tbsp heavy cream or half & half

1 1/23 tsp orange zest (optional)


Instructions

Preheat oven to 350Β°F and grease a 12-cup muffin tin.

Mix granulated sugar, brown sugar, melted butter, honey, water, and a pinch of salt for the glaze. Set aside.

In another bowl, combine flour, oat bran, baking soda, baking powder, and salt.

In a large mixing bowl, blend brown sugar, honey, molasses, and oil until smooth.

Add egg, water, cream, and orange zest, mixing until combined.

Gradually add dry ingredients to the wet mixture, mixing until just combined.

Stir the glaze, then scoop about 2/3 tbsp of glaze into each muffin cup.

Fill each muffin cup about 2/3 full with batter.

Bake for 20 minutes, until a toothpick comes out clean.

Cool the muffins for a few minutes, then flip the tin to release them. Enjoy warm or cool!
