1/2 lb (225g) andouille sausage or smoked sausage, sliced

1 onion, chopped

1 green bell pepper, chopped

1 celery stalk, chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 1/2 c long-grain white rice

3 c chicken broth

1 tsp dried thyme

1 tsp dried oregano

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste for spiciness)

Salt and black pepper to taste

1 bay leaf

1 lb (450g) large shrimp, peeled and deveined

Fresh parsley, chopped, for garnish


Instructions

Heat oil in a pot. Brown the chicken and sausage, then remove.

SautΓ© onion, bell pepper, celery, and garlic in the same pot.

Add diced tomatoes and rice. Cook for 2-3 minutes.

Add spices, chicken broth, and bay leaf. Bring to a boil, then simmer for 20-25 minutes.

Return chicken and sausage to the pot. Simmer for 5-7 minutes.

Add shrimp and cook until pink, 3-5 minutes.

Garnish with parsley and serve.
