Roll:

3 eggs

1 c white sugar

1 c finely chopped cooked carrot

1 (8 oz) can crushed pineapple, drained

1 c all-purpose flour

2 tsp ground cinnamon

1 tsp baking powder

Filling:

1 (8 oz) package cream cheese, softened

1 c powdered sugar

1 tsp vanilla extract

1 c crushed walnuts (optional)


Instructions

Prep and Preheat:Β Preheat your oven to 350 degrees F (175 degrees C). Line a rimmed cookie sheet. OrΒ jelly roll pan with parchment paper.

Mix the Cake Batter:

In a large bowl, whisk together eggs and sugar. Until combined.

Stir in the chopped cooked carrots.Β AndΒ drainedΒ crushed pineapple.

In a separate bowl,Β mix the flour, cinnamon, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients.Β MixingΒ until just combined.

Spread the batter evenly onto the prepared baking sheet.
