Ingredients
1 1/4 c all-purpose flour
1 tsp baking powder
1/4 tsp salt
2 very ripe bananas, mashed
1/2 c unsalted butter, melted
2/3 c sugar
1 large egg
1/2 tsp vanilla
3/4 c sweetened flaked coconut
Instructions
Preheat oven to 375Β°F. Line muffin cups with paper liners.
Mix flour, baking powder, and salt in a bowl.
In another bowl, combine mashed bananas, melted butter, sugar, egg, vanilla, and 1/2 c coconut.
Add the dry ingredients to the banana mixture, stirring until just combined.
Divide batter among muffin cups, sprinkle with remaining 1/4 c coconut.
Bake for 25 minutes, until golden. Cool on a rack before serving.
