For the crust:

1 (14.4-oz) box graham crackers (or 4 c graham cracker crumbs)

1/2 tsp salt

1/2 c sugar

3/4 c unsalted butter, melted (12 tbsp)

For the filling:

4 (8-oz) packages cream cheese, softened

1 1/2 c sugar

4 large eggs, room temperature

2 tsp vanilla extract


Instructions

Preheat your oven to 350 degrees Fahrenheit. Lightly coat a 9-inch springform pan with nonstick cooking spray.

Crush the crackers until they become crumbs. In a bowl combine the graham cracker crumbs, salt, sugar and melted butter. Firmly press 3 cups of this mixture into the bottom and sides of the pan to create the crust.

Using a mixer blend softened cream cheese, sugar and vanilla extract until it becomes smooth. Gradually add one egg at a time mixing enough to incorporate each one.

Pour the cream cheese mixture onto the crust. Sprinkle the remaining graham cracker mixture, over the top. Gently pat it down.

Bake for 65 to 75 minutes. Until the edges are set but the center still has a slight jiggle.

Allow the cheesecake to cool completely at room temperature. Refrigerate for 4 hours or preferably overnight, before slicing and serving.

Gluten-Free Almond Crumb Crust: Instead of using traditional graham crackers you can replace them with an equal amount of gluten-free almond flour or finely ground almonds.
