Ingredients
Cookies:
1 c creamy peanut butter
1/2 c honey
1 large egg
3 c old-fashioned oatmeal
1 tsp baking soda
Filling:
1/3 c creamy peanut butter
1/3 c Crofterβs Organic Seedless Blackberry or Raspberry Premium Spread (or jam of your choice)
Instructions
Preheat oven to 350Β°F and line baking sheets with parchment paper.
In a mixer, beat 1 c peanut butter with 1/2 c honey until smooth. Add 1 large egg, then mix in 3 c oats and 1 tsp baking soda.
Scoop dough onto sheets, flatten with your hand and bake for 7-8 minutes. Cool on wire racks.
Spread 1 tsp peanut butter on half the cookies and 1 tsp jam on the others. Press together to make sandwiches.
