16 oz pasta, cooked al dente

1/2 c diced onion

1 c diced green pepper

2 tbsp minced garlic

3 tbsp unsalted butter

3 tbsp all-purpose flour

2 c chicken broth

1 c plain Greek yogurt

2 c shredded cheddar cheese

2 c shredded mozzarella cheese

114.5 oz can diced tomatoes, drained well

16 oz cooked cubed chicken

1 tsp salt

1 tsp pepper

12 tsp dried oregano


Instructions

Preheat your oven to 350Β°F and spray a 9×13 pan with nonstick spray.

SautΓ© diced onion, green pepper, and butter in a large skillet for 2-3 minutes.

Stir in the flour and cook for another minute. Gradually whisk in chicken broth until it thickens slightly.

Remove from heat, then add Greek yogurt, 1 cup cheddar, and 1 cup mozzarella cheese. Stir until smooth.

Mix in the cooked pasta, minced garlic, cubed chicken, and drained diced tomatoes. Season with salt and pepper.
