2 c (226 g) cake flour

1/2 c (40 g) cocoa powder

1 1/2 tsp baking powder

1 tsp fine salt

3/4 tsp ground nutmeg

1/2 c granulated sugar

3 tbsp butter, room temperature

2 large egg yolks

1 c sour cream

Canola oil, for frying

For the Glaze:

3 1/2 c (350 g) powdered sugar, sifted

1 1/2 tsp corn syrup

1/4 tsp salt

1/2 tsp vanilla extract

1/3 c hot water


Instructions

Start by sifting 2 cups of cake flour 1/2 cup of cocoa powder, 1 1/2 teaspoons of baking powder, 1 teaspoon of salt, and 3/4 teaspoon of nutmeg in a bowl.

In a mixer beat 3 tablespoons of butter and 1/2 cup of sugar. Until the mixture resembles sand. Then add 2 egg yolks. Beat until fluffy.

Add the flour mixture and 1 cup of cream to the butter mixture. Alternating between them. And beginning and ending with the flour. Mix until just combined to form a dough. Chill for an hour.

On a floured surface. Roll out the dough to a thickness of half an inch. Use a cutter to cut out doughnuts. Re-roll any scraps as necessary.

Heat canola oil to 325Β°F. Fry a few doughnuts at a time for 2 minutes on each side. Until they turn brown. Drain them on paper towels.

Prepare the Glaze: Whisk together 3 1/2 cups sugar, 1 1/2 teaspoons corn syrup, 1/4 teaspoon salt, 1/2 teaspoon vanilla extract, and 1/3 cup hot water until you get a smooth glaze.
