Ingredients

4 slices bacon (or 2 tbsp olive oil for vegetarian)

Β½ c onion (diced)

1 tsp minced garlic

4 c vegetables (bell peppers, broccoli, zucchini, etc.)

10 eggs

ΒΌ c whole milk

Β½ tsp fine sea salt

ΒΌ tsp freshly ground black pepper

ΒΌ tsp paprika

1 c shredded Cheddar cheese


Instructions

Preheat Oven: Set your oven to 425Β°F. To prepare for baking the frittata later.

Prepare Eggs: In a large bowl, whisk together 10 eggs, ΒΌ c of milk, Β½ tsp of sea salt, ΒΌ tsp of black pepper, and ΒΌ tsp of paprika. Stir in 1 c of shredded cheddar cheese and set aside.

Cook Bacon & Vegetables: Heat a 10” cast iron skillet over medium heat. Cook 4 slices of bacon. Until they begin to brown. Then add Β½ c of diced onion and 1 tsp of minced garlic. SautΓ© until onions are soft. Add 4 c of chopped vegetables. And cook until tender. About 5 minutes.

Combine & Cook: Pour the egg mixture over the cooked vegetables and bacon. Stir gently to mix everything well. Let it cook on the stovetop for 4-5 minutes. Until the edges start to set.

Bake & Cool: Transfer the skillet to the preheated oven. And bake for 7-10 minutes. Until the top is golden and set. Remove from oven. Allow it to cool for 10 minutes before serving.
