2 tsp vanilla extract

1 large egg + 1 egg yolk, at room temperature

1 c carrots, finely grated

1.5 c + 2 tbsp all-purpose flour

0.5 tsp ground ginger

0.5 tsp cinnamon

0.5 tsp salt

0.5 c chopped pecans

For the Cream Cheese Frosting:

4 oz unsalted butter, very soft

8 oz cream cheese, very soft

1 tsp vanilla

2 c confectioners’ sugar

0.5 c chopped pecans


Instructions

Preheat Oven:Β Set your oven to 350Β°F (177Β°C). Line a 9×9 inch baking pan. With parchment paper. And spray it. With non-stick baking spray.

Mix Wet Ingredients:Β In a large bowl. Whisk together the melted butter. Brown sugar. And vanilla. Until smooth. Add the egg. And egg yolk. Mix well.

Add Carrots:Β Fold in the finely grated carrots.
