2/3 c (132 g) granulated sugar

2 large egg yolks

1 tsp vanilla extract or vanilla bean paste

2/3 c (160 g) sour cream

3 1/4 c (370 g) cake flour or 315 g all-purpose flour + 55 g cornstarch

2 1/4 tsp baking powder

1 tsp salt

1/2 c (80 g) dried blueberries

For the Glaze:

1/2 c milk

4 c powdered sugar

1 tsp vanilla extract or vanilla bean paste


Instructions

Prep the Blueberries: Chop dried blueberries. Soak in hot water for 5 minutes, then drain.

Make the Dough: Mix melted butter and sugar until fluffy. Add sour cream, egg yolks, and vanilla. Combine with flour, baking powder, and salt. Stir in blueberries. Wrap the dough in plastic wrap. And refrigerate for 1-2 hours.

Cut the Donuts: Roll out chilled dough to 1-inch thickness. Cut out donuts and holes.

Fry the Donuts: Heat oil to 375Β°F. Fry donuts for 1.5 minutes per side until golden. Drain on a rack.

Glaze the Donuts: Heat milk and whisk in powdered sugar and vanilla. Dip donuts in glaze. And let excess drip off.
