1 small onion, diced

1 clove garlic, minced

Salt and black pepper

5 tbsp tomato paste (Β½ of a 6 ounces can)

2 tbsp maple syrup

1 tbsp balsamic vinegar

ΒΌ tsp salt

For Serving:

1 tbsp chopped fresh parsley

2 tbsp grated Parmesan cheese


Instructions

Prep Oven & Pan:Β Heat your oven to 450Β°F. Line a sheet pan with foil and spray with cooking spray to prevent sticking.

Mix Meatloaf Ingredients:Β In a large bowl, combine all the meatloaf ingredients. Mix with your hands just until everything is evenly distributed, but don’t overmix to keep the meatloaf tender.
