Ever have one of those nights where the fridge gives you nothing but a random collection of ingredients and a hope for the best? That was me last Thursday. I had shredded chicken, a jar of Alfredo sauce I’d forgotten about (not expired, I checked), and a box of lasagna noodles that had been in my pantry so long it practically whispered, Use me already.

I wasn’t in the mood for full-blown lasagna—too many layers, too much commitment. But roll ups? Now that felt manageable. So, I threw the chicken together with some sauce and cheese, rolled it all up in the noodles, and bam—into the oven it went.

The kitchen smelled so good my husband wandered in asking, “What smells like it belongs in a restaurant?” Not bad for a dinner born out of leftovers and mild desperation, right?

Long story short, these Chicken Alfredo Lasagna Roll Ups are now on repeat at our house—because they’re crazy easy, ridiculously cheesy, and make me feel like I’ve got my life together.

Why You’ll Love This Chicken Alfredo Lasagna Roll Ups Recipe?

  • Lasagna, but less fussy. No complicated layering—just roll, sauce, bake.
  • Busy-night friendly. Dinner’s on the table in under an hour.
  • Guaranteed Crowd-Pleaser. Trust me, these disappear fast.
  • Great for Leftovers. Rotisserie chicken? Perfect. Leftover turkey? Go for it.
  • Cheese Lover’s Dream. Creamy Alfredo, melty mozzarella, and salty Parmesan? Say no more.

Ingredient Notes:

These roll ups are all about simple ingredients working overtime. Here’s the scoop:

  • Lasagna Noodles: Stick with the classic, wide lasagna noodles—boiled just until al dente so they hold their shape without falling apart.
  • Shredded Chicken: I almost always use leftover rotisserie chicken for this. It’s faster. (But if you’ve got cooked chicken breasts or even leftover turkey—go for it!)
  • Alfredo Sauce: Store-bought keeps things simple, but if you’ve got 10 extra minutes, homemade Alfredo sauce (butter, cream, and Parmesan) really takes it up a notch.
  • Mozzarella Cheese: The classic. Melty, gooey, perfect. Shred it fresh if you can—it makes a difference.
  • Parmesan Cheese: Salty, nutty, and essential for that Alfredo flavor.
  • Garlic Powder: A little shortcut for flavor—because not every night is a “chop fresh garlic” kind of night.
  • Lemon Zest: Just a touch adds a brightness that keeps the dish from feeling too heavy. Don’t skip it. Trust me.
  • Italian Seasoning: Gives the filling that cozy, herby vibe.
  • Fresh Parsley: Optional garnish—but it makes the final dish look extra pretty.

How To Make Chicken Alfredo Lasagna Roll Ups?

Let’s break this down. Imagine we’re cooking together in your kitchen—music playing, aprons optional.

Step 1. Preheat & Prep:
Start by preheating your oven to 350°F and lightly greasing a 9×13 baking dish. If you skip the grease, the noodles will stick—ask me how I know.

Step 2. Cook the Noodles:
Boil your lasagna noodles in salted water just until they’re al dente. (Firm but tender if you’re like me and need Google to remind you what that means every time.) Drain them and rinse under cold water to stop the cooking. Lay them flat so they don’t stick together.

Step 3. Mix the Filling:
In a large bowl, combine half the Alfredo sauce, shredded chicken, ½ cup mozzarella, ¼ cup Parmesan, garlic powder, lemon zest, and Italian seasoning. Mix it all up until it looks like something you’d want to eat with a spoon. (Not judging if you do.)

Step 4. Assemble the Roll Ups:
Lay the cooked noodles flat. Spread a thin layer of the chicken mixture across each noodle. Don’t overload them—just enough to cover the surface. Roll them up gently but tightly, like you’re tucking them in for a cozy cheese nap.

Step 5. Sauce the Dish:
Arrange your roll ups, seam-side down, in the prepared baking dish. Pour the remaining Alfredo sauce generously over the top. More sauce = better.

Step 6. Cheese Time:
Sprinkle the rest of the mozzarella and Parmesan all over the top. If you’re wondering, Is this too much cheese?—the answer is always no.

Step 7. Bake Covered:
Cover the dish with foil and bake for 20 minutes. This lets the sauce get all bubbly and keeps the cheese from browning too soon.

Step 8. Uncover & Broil:
Remove the foil and bake another 10 minutes until golden. Want extra crispy cheese? Broil for 2-3 minutes at the end—but keep an eye on it (because cheese goes from golden to burnt faster than you’d think).

Step 9. Serve It Up:
Sprinkle with parsley and dig in. Bonus points if you serve it straight from the baking dish like you’re hosting a rustic Italian feast.

Storage Options:

  • Refrigerator: Keep leftovers in an airtight container for up to 3 days.
  • Freezer: Assemble the roll ups but don’t bake them. Wrap tightly in foil and freeze for up to 2 months. Bake straight from frozen—just add an extra 10-15 minutes.
  • Reheating: Pop leftovers in the oven at 350°F for the best texture. Microwaving works too, but you might lose a bit of that bubbly cheese magic.

Variations and Substitutions:

  • Protein Swap: Try turkey, ham, or even crumbled Italian sausage.
  • Cheese Boost: Mix ricotta or cream cheese into the filling for extra creaminess.
  • Veggie Twist: Add spinach, mushrooms, or roasted red peppers to the filling.
  • Spicy Kick: Toss some red pepper flakes into the filling or sauce.

What to Serve with Chicken Alfredo Lasagna Roll Ups?

These roll ups are rich, so you’ll want some balance on the plate:

  • Crisp Salad: Think mixed greens with a lemon vinaigrette.
  • Garlic Bread: Because carbs on carbs just makes sense.
  • Steamed Veggies: Broccoli or asparagus for something light.
  • White Wine: A chilled glass of Pinot Grigio or Sauvignon Blanc works perfectly here.
