- 1 tbsp olive oil
- 1 small onion diced
- 2 garlic cloves minced
- 2 c chicken or vegetable broth
- 1 14 oz can of fire-roasted diced tomatoes, with liquid
- 3 14 oz cans of black beans, drained and rinsed
- 1 4 oz can of diced green chilies, with liquid
- 1/2 red bell pepper diced
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1 tbsp lime juice
- Salt and pepper as needed
- Optional toppings: chopped cilantro sour cream, tortilla strips, sliced avocado, etc.
Instructions
- Heat the olive oil in a large pot. Then add the chopped onions. And cook over medium heat. Until they start to brown slightly, about 5-7 minutes. Which enhances their flavor.

best black bean soup ever it was delicious had a really nice smoky flavor and just almzing flavor over all. i blended in ½ cup cheddar cheese and made rice to go with it didnt have bell pepper so didnt use it i also used red onion because didnt have yellow onions. my toddler also loved it they like black bean soup alot thoughq. i will be freezing some for later and definitely making more.
